Buhler food technology innovation award

The Buhler Technology Group awarded the renowned European food technology innovation award for a process that revolutionizes rice processing.

Buhler AG, headquartered in Uzwil, Switzerland, was presented the European FoodTec Award in Gold in early April. The European FoodTec Award is the most renowned innovation award in the field of European food technology. It distinguishes innovative concepts in the food processing industry that have been successfully put into practice. Buhler received the coveted award for a process which on the one hand minimizes losses during rice processing and on the other hand restores the nutrients to the milled rice that it originally contained.

High-vitamin rice from the extruder
The traditional rice whitening and polishing process, which transforms paddy (rough rice) into white rice, is associated with losses of component substances. When rice is used as a staple food, this may give rise to nutritional deficiencies. To correct this situation, the specialists from Buhler have developed a cooking extrusion process enabling material obtained during rice milling to be transformed into a product resembling natural rice in terms of visual appearance and contents – so-called reconstituted rice. Appropriate product formulation and process design allow products to be made with a defined composition and tailormade features in terms of color, shape, and texture. As the ingredients added in this process are encapsulated in the granular rice product, they possess above-average process and storage stability. This feature can be utilized, for example, in the production of functional foods. A special focus is set on the production of reconstituted rice that is enriched with vitamins and minerals. It can be added to white rice in the desired proportions in order to ensure an adequate supply of nutrients in countries where rice is a staple (especially developing and emerging economies).

“This innovation ranks the company among the innovation leaders of its industry,” said Carl-Albrecht Bartmer, the President of the German Society of Agriculture (Deutsche Landwirtschafts-Gesellschaft, DLG e.V.), during the award presentation ceremony. “This distinction is not only a reward for an outstanding technological development, but also an encouragement for companies honored to continue their research efforts.” The award was presented during the Anuga FoodTec, the international trade show for food and beverage technology held in Cologne. It is sponsored by DLG e.V. together with various trade journals.
